Fried Chicken Batter 1 c. All purpose flour 1 c. Corn starch 2 tsp. Baking powder 5 tsp. Black pepper 1 tsp. Salt 1 tsp. Paprika 1 3/4 cup cold water Mix well and put in fridge. Brine 1 quart water 1/4 c. Salt 1/4 c. Sugar Mix well and add 4 pounds of chicken ( I used legs) Put in fridge with batter for 30 minutes to a hour. Heat oil in large pot to 350 ( I used peanut oil) Get chicken out of brine and dry it well. Put a few pieces in the batter and then in hot oil. Fry until internal temperature is 170-175. Place on wire rack to drain off oil and enjoy!!!
